Living in California has its advantages for lovers of locally grown organic produce. Aside from the beautiful and warm sunny day, my visit to my local Farmer's Market this morning highlighted the fact the spring is really here! (Finally!) Asparagus and sugar snap peas are suddenly available in abundance. One of my favorite farmers at the Los Gatos Farmer's Market was selling the most enormous bok choy I've ever seen -- like bok choy on steroids. I asked about the gigantic size, and he said their soil in Watsonville is rich and fertile. Naturally, I bought some to have for dinner tonight. There are many reasons I'm thankful that spring is here -- more veggies (and bigger veggies, apparently) is one of them!

Wow! I'm saying bok choy in a really big voice if I see that one! It definitely looks beautiful and perfectly green. How much does it cost?

Wow, I wonder what the secret is for growing bok choy to that size! How do you serve this at the dinner table? Is it chopped and used for salad or used as flavoring for other parts of the meal?

Wow that bok choy looks delicious. I love my Sunday adventures to the local organic markets. The produce is so rich in colour and look sensational. I have to exercise restraint not to buy everything and to stick to my shopping list.

That must be a great farmers market. I live in Orange County California and I have a hard time finding a farmers market with any organic produce. I have never had bok choy....I don't know how to prepare it but it looks good. Have a wonderful day.

Wow! I have never seen Bok Choy like that! I can't wait for the farmer's markets here to open up (although in Colorado, that is in mid June!)
